St. Elmo was the first brewery I visited in Texas on a hot night in late May/early June. This was their pretty straight forward ipa. Pours amber in color, but it will drink lighter than its appearance. 1/3" white head. Not sure if this one is dedicated to the Bayshore Hawks or whatever they were.
The aroma was crystal malt and what I perceive as Citra hops given the light orange/tangerine notes in the aroma. The taste displayed less caramel maltings than the appearance and nose, actually was pretty crisp relative to those factors. Brought on a C hop like grapefruit and pine bitterness that played well in tandem with the sweeter citrus notes. I didn't think the beer had anything similar to a hazy ipa attribute. It was like somewhere in between a SNPA and a west coast ipa. This was probably my favorite ipa/hoppy beer they had going. It doesn't knock your socks off but it gets the job done. Bonus that the servers were cool too.

On tap at the source- opaque apricot honey color with short white head leaving frosty lacing. Nose is citrus forward with hints of sweet malt. Taste follows with mild bitterness lingering on the dryish finish.

16oz can with no date - purchased at the brewery on 10-6-20. Opened 10-9-20.

Deep golden IPA with an initial chill haze. Full and sticky lacing.
Glazed lemon bread / coffee cake aroma. Fruity and yeasty sub-aroma.
Sweet lemon and orange peel. Tart citrus, sour orange.
Full body. Low-medium carbonation. Moderate bitterness in a medium length off-dry finish.
WCIPA flavors and bitterness with more of a NEIPA body...maybe an ATXIPA?

This beer pours nicely with a faint haze and a frothy head. It's got a mild citrus aroma, with a hoppy flavor that's not offensively bitter. The finish is dry, with a mild, somewhat malty sweetness.
