Brewed once a year with just-picked, whole-cone Simcoe from Loftus Ranches (sourced via Yakima Chief). Hops were picked in Washington, shipped cold overnight, and hit the kettle within 24 hours. Expect bright pine and citrus peel with a hint of stone fruit, that plush “green” hop mouthfeel, a crisp bitterness, and a clean, dry finish. Limited, ultra-fresh, and meant to be enjoyed now.

Tasted on tap at the brewery taproom in South Austin, TX.
Dark copper to light brown with good clarity. Light wisps of foam and strong lacing. Nice aromas of toasted grain and chocolate. Chocolate and brown sugar are prominent in the flavors, along with restrained herbal hops. Gentle yeast fruitiness. Thinnish body and off-dry finish are good for the style, as are the gentle bitterness and low alcohol presence. This is a well-executed example of a style many brewers can't get right. Very enjoyable.
