Packaged August 2021 - consumed 3/9/2022. Poured from a tall boy can into my Drie de Fonteinen tumbler.
Blend of Simple Saison and Saison Du Rosier, aged in "neutral oak wine barrels," mixed with Cirone Farms blenheim apricots and conditioned with honey.
Hazy cobalt yellow liquid with three fingers of dense hard peak foam. Fluffy, Poly-fil like lacing; superior retention.
Blenheim apricot character pierces through the tart, faintly funky base. Rich, and delightful nose.
Blenheim apricots again on the palate - sweet, juicy, pure, and distinctive fruit. Tart, lemon-kissed base with a touch of biscuity malt and some gently phenolic, floral yeast notes. Medium finish with a hint of white grape, grapefruit, and minerality. Very low bitterness throughout. "Wild" microbes are restrained, as this presents as more of a fruited saison (albeit with a persistent tart flavor) than a potent sour.
Smooth, light, lacy, medium-carbonated, faintly tannic mouth-feel.
Superior ingredients along with attention to craft lead to a superior product. I usually prefer more complexity in this style, but despite being mellow, the drinkability is undeniable.
