Komorebi translates to "sunlight leaking through trees" and to me, perfectly encapsulates aura of this beer.
During the harvest season, we brought in a (literal) ton or two of Riesling grapes. They underwent carbonic maceration, crushing, aging on the pomace and finally the separation of the pomace (solids) and must (liquid). Rather than pressing the grapes, we let gravity do the work of separating the must and left the pomace full of juice and actively fermenting. We then added it by hand to barrels and racked in a bright, fruity saison.
The beer aged for several months to extract as much character as possible from the skins of the grapes, beyond the contribution of all the remaining juice.
Komorebi is deeply complex and evocative of it's namesake. It's rustic and earthy with black pepper and cedar notes, but at the same time warm, delicate and inviting.

Super bubbly, apricot orange brew that effervesces like champagne…must be the grapes.
Bouquet is oaky, dry, with subtle grape notes and a touch of earthy funk.
Flavors are more layered, with a nice drying snap typically of farmhouse ales, but the grapes lend and berry like, almost bubble gum aspect that quite unique. Alcohol is well masked for the ABV, tasty brew.
