This beer has the bones of a classic saison but the dry hopping makes the complete package really pop. The saison yeast gives off fruity esters and earthy phenols that smell and taste of ripe pears, dried apricots, and light white pepper. The Mosaic hops bring clear hop presence with aromas and flavors of ripe berries. The yeast and hops are knitted together with a wheat-forward malt bill that is easy drinking and lightly creamy.

16 ounce can into a tulip glass.
Pours a bright, clear yellow, with a 2+ inch spongy foam head and some foamy lacing. Very active carbonation. Aromas of Belgian yeast, crackers, malt, pear, spices, some herbal hops, light white grapes, black pepper in the head. Tastes of malt, herbal and earthy hops- especially on the finish, light Belgian yeast and wheat, light white grapes and spices, light hop bitterness. Has a bit of a fruity taste. Smooth, a little creamy, semi- dry, with a good medium body. Appropriately carbonated.
Liked this. The hops give it a little bit of a different character and while they’re not dominant, this could use a fuller body to stand up to them a little more.

Since Mosaic Voxel is an experiment, let's focus on how it can improve.
Its Looks indicate it clearly lacks a really active yeast that creates tight foam and swirling protein that preferably lasts almost as long as the drink does. Voxel Smells a little better, mostly malt followed by hops. But aromatic hops quickly get shoved aside in the Taste by the bitter hops. For this reason, I'm thinking Mosaic-dominance is not a good mix for a saison. This style plays well with food and Mosaic-dominance wants to keep the crown. While domineering hops help some foods (usually ones not really worth the calories), Mosaic Voxel will not help good food. And that should be the goal of Lo Rez.
Only my third from Lo Rez, I like them. It takes spunk and more than a little pluck for a 4 year old neighborhood micro to specialize in Belgians because their yeasts are so hard to replicate and keep consistent. But Lo Rez continues to show pluck... and I continue to promise myself that I will visit their taproom. Some day, we will both get there.
