This is a re-brew of our collaboration with Casita Cerevezeria. Based on a Gotslandrika, juniper and smoke Viking beer. Mixed ferment in oak featuring Norwegian farmhouse yeast. We also added Cedar and pine. Beautiful acidity, with bright mid-pallet resiny conifers that fades to a bright clean up.

A- Pale golden yellow body with a thick foamy white head to one finger. Decent head retention as a thick layer on the beer leaves a few sheets and webs of lacing.
S- Terrior and funky bugs build the aroma with minimal wood influence sans hints of pine and cedar. Musty old grapes and apples in the barnyard and cellar, lactic bacteria fermentation, pine sap, sour stone fruit and vinous notes.
T- Sour lactic acid bacteria and tart stone fruits lead off with plenty of funky wild bug fermentation. Musty wine, pale tart grapes, apples and pears, lemons and lactic acid, vinous wet worn out oak, underripe apricot, sulfury lambic hints and whole crusty grains. Honestly like an unblended lambic with some authentic flavors and minimal pine hints, hard to find the juniper and cedar but probably a good thing.
MF- Very puffy and foamy texture to the light end body. Not thin as a very high end carbonation brings on that consistency. Ends fairly sour.
Not quite as of the trees as I expected but the sour base beer is on point for a golden sour brew. Funky, tart and flavorful.

375ml bottle solodomed. Pour was a hazy copper/orange with a fizzy white head that faded leaving minimal lacing. Smell was exactly how the bottle described with a tad more funk! I was skeptical of the taste because cedar and pine may taste super bitter and weird but it was incredible and delightful. The feel was full and fizzy upfront but slick and long in the back. Overall this was awesome and i wish i had another for Christmas day!

I'd call this one an American Wild Ale... :)
Moderate pour yields an almost two inch white head over a slightly hazy golden body with very nice lacing. Nose of funk, cedar, fresh pine forest, and slight white grapefruit. Tastes of white grapefruit, cedar, and fresh pine with a very nice feel and an exquisite, dry finish. Overall, very impressive. Cheers!
