Ale brewed with spelt, goldenrod and honey and fermented in oak.

Bottle from Winooski Bevy.
This was poured into a tulip.
The appearance held a frosty to semi-hazy sort of paper yellow color with a finger's worth of white foamy head that dissolved faithfully at a gentle pace. Some lace ran around the glass fairly nice.
The aroma captured a nice sweet to zesty lemon pulpy/pith-like character that played fairly nice with a smooth sweet honey. Just a whiff of sweet grains balanced with a little bit of grassy to earthy spicy sort of woodiness further in the back.
The flavor was moderately sweet with a nice zesty to semi-tart like quality coming in for a soothing sort of balance. That earthy to spicy sort of woodiness came in pretty nice as it continued to warm. Aftertaste was a nice blend of the honey, spicy wood earthiness and the tartness of some lemon.
The mouthfeel was about medium bodied with a fair sipping quality about it. Due to the tartness starting to overtake slightly in the harshness department running along my tongue, I'm guessing that's why I seemed to want to sip this more. Carbonation felt great. No ABV is on the bottle and I couldn't find that anywhere else, so there's nothing to say here from me.
Overall, pretty nice beer all around, perhaps my personal opinion would say that I'd want this again for me, but it's definitely in the Wunderkammer fashion of "creativity."

Pours golden. Funk and lemony citrus on the nose. It's lemony citrus forward with a strong parm rind backbone. The mixed culture plays prominently here and there's a little tang on the finish. It's a little too lemony, it's not puckering, but it's a little too sour for me.

This one pours a hazy golden orange color, with a small white head, and lots of lacing.
This is assertively tart on the nose, with heavy notes of slightly sweet fermented honey, oak, lemon juice, and funky wheat.
This is assertively tart and very bright, with a surprising amount of honey. Given how tart the beer is, the honey sweetness is a nice counterpoint. There's a nice herabl funkiness, I'm assuming from the foraged ingredients
This is light bodied, and very refreshing, with a lingering acidity. There's a soft level of carbonation.
Wunderkammer is secretly one of the more interesting breweries in Vermont. This is a very nice beer.

375 ml. Bottle Place of purchase....I can't say. Abv. Is a mystery.
A white, hazed out straw-gold color, a fizzy, bubbly appearance with a smooth, clumpy, snow white foam dome. Such a beautiful white out style haze to it. The active, live cultures keeps it bubbly, active and jazzy the entire time and constant foam topping as well.
The nose has a delightful mix of earthy herbs, Grandma's spice rack if it included spelt, goldenrod and honey. Smells like a wet wheat field in the middle of July. The sweetness of the honey and oak barrel is easily detected. A foragers delight!
The sour yeastie flavor is off the charts! No doubt, the wild array of ingredients leads to the very unique and original flavor spectrum that lies within. The herbal spice blend is very prevolent and provides even more fine earthy tones. Layers of sour!! Reminds me of "Supplication" from Russian River. High level, wild and sour flavor, smooth...light, crisp body...very much like a Traditional Belgian Saison with even more funky, sour tones. It's very hard to tell how "strong" this brew is. The flavor is soo complex and funky I cannot judge what the abv. % might be. It seems on the light side, but with honey and oak barrel aging it might be above 6%. (?)
Overall, a very impressive "wild" style Saison with unique ingredients and texture. Maybe a little goldenrod in my diet will improve seasonal allergies?!

Had on tap. This is what sour saisons should strive for! Great sour oak elements through out, with the honey and flowers driving the supporting flavors home: grass, lemon, orange. The body has a breadiness, guessing from the spelt, that is wonderful, with plenty of yeasty funk too.

Moderate pour yields a nearly one inch white head over a slightly hazy, very light straw colored body with some nice lacing. Nose of citrus, bread from the spelt, and very slight honey. Taste is very tart, but the honey mellows it out very nicely. Such a refreshing treat this is. Very nice feel and overall another job well done. Cheers!
