absolutely stunning beer here, maybe my favorite from my whole trip back east, which was packed to the gills with awesome beer, but this really stands out as superior, done with both new and more mature spruce tips, infinitely complex but also beautifully subtle, wheat based, but this is hardly about the grain, the spruce element and the ferment are what make it special. frothy white headed from the tap, a permanent inch of beaten egg white, hazy pale body, not overly light but very active. the nose and flavor are the essence of a pine tree in the spring, new growth pushing through the old as snowmelt fuels a new season, this is terroir, for anyone who is unsure, this is it in a beer. there are some noble type hops supporting the spruce, herbal themselves, grassy and green, only modestly bitter. i love the grain structure here, the light nuttiness it has, and how dry it all is. the essential oils of the pine element are insane, its almost gin-esque, and there is a mix of well restrained type saison yeast esters here and farmy funk, slightly tart, very rustic but also very professional, i always love their ferments and this is no exception. one of the most unique yet drinkable beers ive had from these guys, from anyone really, dynamite with fresh oysters, something i will remember fondly forever, i hope i can drink this one again someday!
