Very clear, green yellow. Strong lacto smell and flavor. Some pleasant banana runt flavor. Peppery texture, partly from the lactic acid. Nice wild ale.

Poured from 750mL corked & caged bottle into a tulip. Bottled July 2017; batch 2.
Appearance: light yellow-golden hue with a crystal clear body and a thin layer of frothy white foam. Not bad looking!
Smell: a little bit of sweetness and quite a lot of tartness. The aroma suggests that there's going to be a lack of balance here, but by itself it's quite nice.
Taste: very tart indeed right up front, but the tartness quickly mellows into a soft, wheaty, floral finish. The bottle says this is brewed with chamomile and aged with lactobacillus for tartness, and it definitely tastes the part. Bright start and mellow finish ... I like it.
Mouthfeel: medium-light body with a pretty big carbonation and a decent enough creaminess.
Overall: I like this beer, although it does lack in complexity a bit. The chamomile starts to build on the palate after multiple sips, and the earthiness of it helps offset the sour a bit. Definitely worth a try if you're into floral beers or off-the-beaten-path sours.
