How do you hide a big beer in plain sight? With a little magic. How do you make such a dry beer taste so juicy? A little alchemy. This Super Saison is fermented initially with Saccharomyces and undergoes a secondary fermentation with a proprietary, fruit-forward Brettanomyces strain.

Brett beer!
Mmmmm, bretty!
Looks great, clear and golden. Light brett notes on the nose: wet blanket, hay, horses, what you will. The sip is equally balanced and nuanced with a lingering, drying finish.

Batch 6, about 6 months old.
A mildly hazy orange with a dense, beige head with good retention and lacing. The nose is pretty glorious Brett, with pineapple, clove, nice phenols. Mild ester from the base saison, pairing harmoniously with the Brett. Lemongrass, mint, eucalyptus. The palate opens fruity with honey, pineapple, strawberry, melon, along with a nice fermentation character. Warming, spicy,mildly estery, pairs well with the base straw, mild candi sugar, fruity sweetness. Medium in body and highly carbonated. Long, spicy and fruity finish. Quite delightful.

1 year old bottle poured into pilsner glasses. Absolutely absurd carbonation, like even more than shaken champagne. The color is a hazy golden yellow, with a fantastic fluffy pillow white head and very strong retention and crown. The smell is reminiscent of clean and fresh citrus and grapefruit. The taste is grapefruit forward, some green apple and lime aside, delicately shifting into lime and tannin woody tones and a tinge of champagne twang on the finish that lingers just long enough. The feel is very, very dry, yet the flavor remains juicy and fresh, with a silky smooth juicy body, but a noticeable hot alcohol note that lingers throughout.
This is a very unique style I have never had, and it was incredible, however it is quite hot alcohol wise. Perhaps more age would have toned that down as it does with a good mead, but who knows.
