world class beer here from these guys. i have loved their hoppy stuff, but this is a new experience, the first funky saison type of theirs i have had or even seen, but its immediately obvious that these guys really can do it all! this is amazing beer, as good as any comparable beer out there as far as i am concerned, surprised they havent blown up already! this is delicate and interesting, mature as a base beer with a lot of well developed brett character and a heap of oak, but at the same time extremely fresh and bright and young because of the hops, an almost noble profile to it, grassy and fresh with a touch of earthy spice so complimentary to the grain. this really is amazing! its juicy from the hops, with lemon notes in there as it warms, even like a lemongrass and kumquat complexion, faintly tart with the light bacterial element in the finish. the brett really is where its at though, some saison esters coming through real farmy musty funk, approaching lambic at times. strong white wine notes with the light vanilla of the oak is cool, and as dry as this is, it comes back and makes my mouth water after each swallow. i love the complexity, the rustic nature of this, and the level of refinement, its about as professional as it gets, and very unique on the fermentation side. they should be real proud of this one, i am stoked i found a bottle, and it was perfect as a morning beer to get a big celebration started. delightfully drinkable, peppy on the carbonation, and dry. it just sparkles and pops and stands out from the crowd. world class beer, interesting hop profile and awesome yeast layers. amazing!
