Cypress was brewed with a huge double mash of Maris Otter malt and boiled for an extended period of time. It was then laid to rest in Booker’s bourbon barrels for over a year. We get notes of sticky toffee, rich caramel, bourbon-soaked figs, and vanilla wafer.

this is mega, a beautiful beer in every way, somehow elegant for its size, its colossal, but its also so refined, so patient, so slow to sort of unfold and do its thing, i was really impressed with the barrel aged beers i had in here, and this might have been the pinnacle. not quite brown, chestnut maybe, but darker, still in the red family, but with chocolate brown layered in and a very short tan head that fades fast and leaves no lace, maybe slightly less than clear, not an issue. it smells like toffee and caramel and excellent bourbon with oak and vanilla in play, its got an english malt breadiness to it and seems old worldy even with the bourbon, its just yeasty enough too which i love in the style, and has whispers of black tea, molasses and maple, bran muffin, leather, and dry cocoa, amazing depth to this. its alcoholic for sure, but right in line for the style, not too intense or anything. the flavor is fantastic, the whiskey is bold in this but it doesnt overtake what is a lovely base barleywine, obviously boiled forever, its concentrated and robust, bready and rich, praline and brown sugar notes, and rather than make it boozy the bourbon adds a smoothness. this is woody, palate coating, and interesting, it hits like i hoped it would, more complex than many of these, and feels high end the whole way. very little carbonation to it, but i dont miss it. warms up pleasantly, carries sutble stone fruit, raisin, and even brandy notes, wish i picked up a bottle, this is going to age with the best of them...

This one pours a slightly murky golden brown color, with a small head, and no real lacing.

This smells somewhat oxidized, and like kind of like stale wine/stale grapes, with boozy caramel, port, and brown sugar.

As this warms a bit more, that odd stale malty and fruity character sort of fades away, and the sticky, boozy caramel, raisin, and brown sugar flavor comes to the forefront a bit more.

This is medium bodied, and pretty lightly carbonated, necessitating some slow sipping to get through this.

This is a little bit messy - it had some interesting points, but something is not quite right here.
