Our House Brett Saison. Fermented with wild and cultured microbes, and yeast from the previous batch to allow for development from batch to batch. Also open fermented for more expressive yeast flavors and for the introduction of additional local microflora. Dry hopped with Amarillo, El Dorado, & Galaxy at over 3 lbs/bbl. Release date: September 9th, 2017

750 ml bottle into tulip glass, bottled on 7/20/2017. Pours lightly hazy/cloudy medium golden/amber color with a 2 finger fairly dense and fluffy white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, red/green apple, mango, watermelon, berries, white wine, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, cork, wood, wheat, cracker, white bread, some leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/fruity/tropical/earthy hops, and moderate pale/wheat malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, red/green apple, mango, watermelon, berries, white wine, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, cork, wood, wheat, cracker, white bread, some leathery/musty funk, and yeast earthiness. Moderate peppery yeast spiciness; pine, citrus peel/rind, herbal, floral, grassy bitterness; and light Brett tang/tartness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, red/green apple, mango, watermelon, berries, white wine, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, cork, wood, wheat, cracker, white bread, some leathery/musty funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/tropical/earthy hops, and moderate pale/wheat malt flavors; with a great malt/bitter/spiciness balance, and no astringent flavors after the finish. Moderate increasing dryness from bitter/spiciness and carbonation. High carbonation and medium body; with a very smooth, moderately crisp, bready/grainy/sticky, and lightly acidic/tangy balanced mouthfeel that is great. Zero warming alcohol for 7.3%. Overall this is an awesome dry hopped Brett saison! All around great complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/tropical/earthy hops, and moderate pale/wheat malt flavors; very smooth, crisp, and easy to drink with the moderately bitter/spicy/drying finish, not aggressive. Has aged wonderfully over the year on the Brett, and you still get plenty of hop character. Amazingly well developed fruity/funky Brett and Saison yeast complexity; balanced vibrant/dank/earthy hops, and nice pale/wheat malt backbone. Minimal residual sweetness from lingering dryness. A really enjoyable offering, and spot on style example as expected of the brewery.

A - Pours golden orange with a large foamy white head. Tons of soapy lacing.
S - Aroma is lemon zest, orange peel, pineapple and musty funk.
T - The taste is peach, pineapple, lemon zest, orange peel, grassy hops, white pepper and some earthy funk.
M - Medium bodied with medium carbonation. Soft mouthfeel with a smooth crisp finish.
O - This is an excellent Saison. The flavors are nice and bright with the perfect amount of funkiness.

Dry hopped with Amarillo and El Dorado. Bottle from Action Liquor released in late summer 2017. Thick and funky. This is horse blanket extreme, full mouthfeel, not so much hop flavour.
