Nordic Cream Ale - Lightly Dry Hopped w/ Mandarina & Saaz - Collaboration with Rake Beer Project - Our buddy Josh Rake is opening a brewery in Muskegon soon called Rake Beer Project. To help kick things off for him, we've brewed up a crusher. We wanted to keep it simple in every way: Pilsner malt, Hornindal yeast fermented at 90F, finished with house cultures, and lightly DH with two simple yet delicious hops. If you enjoyed our wild lagers in the past, this one will be right up your alley.

A - Pours a hazy bright yellow with a sturdy two finger head. The head dissipates quickly leaving some light soapy lacing.
S - Aroma is lemon, green apple and good amount of barnyard funkiness.
T - The taste is lemon, green apple, white grapes, white peppercorns, leather, hay and some earthy funk.
M - Medium body with medium carbonation. Soft mouthfeel with a crisp dry finish.
O - This is a nice easy drinking Saison. Nice mix of fruit and funk. Perfect warm weather beer.

L - massive bright white head atop a pale yellow body.
S - citrus, earth, cotton candy.
T - follows the nose. Sweet citrus, earthy hops. Low bitterness. Moderate sweetness. Low booziness.
F - medium-light body with ample carb.
O - unusual. I guess I can see this as a cream ale.

So interesting. Seemingly a mix of cream ale smoothness and body with tart apple and barnyard funkiness of a wild ale. Strong horse blanket Brett aroma. Funky, slightly savory finish. Solid, I’d love to have more from Speciation! Thanks warnerry!

16 ounce can into tulip glass, canned in 12/2018. Pours very hazy/cloudy medium golden yellow color with a 1-2 finger dense and rocky white head with fantastic retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread dough, light pine/leather/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/light acidic yeast, citrus/fruity/earthy hops, and pale malt notes; with great strength. Taste of big tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread dough, light pine/leather/musty funk, and yeast earthiness. Light-moderate pine, herbal, floral, grassy bitterness; peppery yeast spiciness; and light Brett tang/tartness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread dough, light pine/leather/musty funk, and yeast earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, citrus/fruity/earthy hops, and pale malt flavors; with an awesome malt/bitter/spiciness balance, and no cloying/astringent flavors after the finish. Light-moderate increasing dryness from lingering bitter/spiciness, and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately creamy/bready/grainy, fairly crisp/sticky, and lightly acidic/tangy mouthfeel that is fantastic. Minimal warming alcohol for 6.2%. Overall this is an incredible wild saison. All around fantastic complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, citrus/fruity/earthy hops, and pale malt flavors; very smooth, refreshing, and fairly crisp to drink; with the mellowly bitter/spicy/drying finish. Amazing balance of Brett/Bacteria/Saison yeast, and juicy/earthy hops; with a great balancing clean pils malt backbone. Minimal residual sweetness from lingering crisp dryness. A highly enjoyable offering, and amazing style example as expected.
