2021 bottling; consumed on 10/4/21
Pours a deep yet clear burnt amber/bloody maroon body crowned with a finger of fluffy, pale beige foam; head recedes expeditiously to a vague, paper-thin layer of cap, a moderate, frothy collar, and minimal-no lacing holding to the walls of the glass.
Aroma offers rich dark cherries extending to a figgy, almost caramel-tinged semi-sweetness touched by oak and tinges of Aquavit springtime freshness, priming a distant juniper and sage undertone; funky cheese rind accents an ongoing fluctuation of tannic red currant and raspberry acidity.
Taste shows the Aquavit nuances disappearing almost entirely; what remains is an oaky underplay encompassing cherry hard candies before a lacto-funk overwhelms the back end; red currants and raspberry skins bring a tannic depth to the finish.
Mouthfeel features a light-medium body with carbonation on the lower end of moderate tingling toward an acidity briefly bordering on aggressive before drying calmly into the back end; a weighty tartness expands into the finish as a lactic twang lingers.
Layered aromas harmonized dark fruits and caramel undertones with pseudo-vinegar lacto-acetics and devolve to a most basic form on the palate, leaving a conflicting impression of definitive promise against a progressive letdown; solid overall, though patently inconsistent.
