this type of high ester clean saison has never been my thing, i need more rustic character, more from the ferment, nothing really farmhouse about this at all as far as i am concerned, could even say it drinks more like a belgian blonde or something than a true saison, whether the yeast is french or belgian or whatever else. this is golden and clear, with an average white head from the tap and a ton of lively carbonation. the nose is all esters, green pear and white peppercorn, familiar right away, some buttered popcorn, white wine, and green banana too, apple mint, dish detergent. the grain is cereal forward, maybe a little rye spice in the mix, very cleaned up though too. the flavor is all of this, totally yeast driven, but with a neat grain support both in terms of flavor and texture, which is light but not watery, dry but not all that fast finishing, and quite pleasant overall. to me though, this needs more, some brett, some raw wheat, maybe the wine barrel edition i see they also make brings some of that, this isnt bad, but it just feels like something is missing, too generic on the ferment now to really move me much. i like all the bubbles and think this shows a lot of potential, but more for the fans of clean belgian golden types than funky farmy beers i reckon...
