473ml can - a 'foedre aged wild Saison'.
This beer pours a clear, medium golden yellow colour, with four fingers of puffy, chunky, and fizzy eggshell white head, which leaves a bit of scattered sudsy lace around the glass as it quickly evaporates.
It smells of a strong earthy funkiness, indistinct grapey notes, grainy and doughy cereal malt, some faint black pepper spiciness, and very tame weedy, herbal, and floral green hop bitters. The taste is fermenting white wine, gently funky yeast, bready and doughy pale malt, ethereal black pepper, a hint of saltine cracker, and more super understated earthy, musty, and floral hoppiness.
The carbonation is adequate in its palate-supportive frothiness, the body a so-so middleweight, and mostly smooth, with just a touch of yeast acridity making a minor fuss at this particular juncture. It finishes off-dry, the vinous fruitiness kind of running off with the lingering show.
Overall - the barrel treatment really comes across in this one, almost to the point of obfuscating the underlying brew. Still, it's pretty tasty, and drinkable, especially since the funk factor didn't seem to possess much in the way of staying power, which is always fine with this observer.

Smell - vinous aromas, bready wheat malts, spicy hops, earthy yeast, and hint of black pepper.
Taste - Strong vinous characteristics to start off. There is a hint of saltiness followed by the bready wheat malts. The spicy hops, earthy yeast, and hint of black pepper finish the brew off.
Mouthfeel - Medium bodied with moderate carbonation. Finishes sticky with the vinous characteristics lingering.
Overall - A unique saison that makes use of the foedre by allowing the vinous characteristics to shine through. Another great find here in Cowtown!
