i loved this beer, my favorite from our visit. its a rye based saison with galaxy and nelson hops, and i believe a collaborative effort with tomme arthur from lost abbey, who has some connection to the folks in here i guess. the beer is magic, a lightly hazy but radiant golden brew, capped with a lively inch of white head with excellent retention and ring lacing in its wake. aroma of the yeast first, which surprised me because the hops are so exciting in this one, but i get a nice funky saison blend with a little piquancy, a bit of rustic funk, and a fruity profile that is super compatible with the hops here, fresh and tropical. i dont get much of the rye malt in nose or taste, but it does have a certain understated multigrain complexity, akin to a good grisette, but not rye on its own i dont really find. the hops are awesome, equal parts nelson and galaxy, really vibrant and alive in this one, fruity but not hardly bitter at all, and finished off brilliantly by this yeast strain, which lends a wonderful almost wild complexity to this, but stays very clean in the finish. this is the exact kind of saison i like to drink, and a really supremely well done beer, especially considering these guys are brand new. i loved this, and reckon it will be one of their most popular offerings if they keep brewing it. great carbonation, crackling dry, and flavorful from all angles and ingredients. my mouth waters for another one as i write this. awesome!
