Little Bird was fermented with our farmhouse saison yeast strain and a blend of several brett strains. 60% pils/30%wheat/10%rye. Light pear, spice and clove, light clean hop lemon bitterness, slight ripe fruit finish. A refreshing and complex small beer.

SRM 5-6 (light gold) with a chill haze and occasional random carbonation. A big, fluffy white head flashes over the top before immediately retreated to a thin veil coating. Wispy, white lace coats the fisheye glass.
The aroma is delicate sweet lemon/lime with a funky twist. Dry straw and light floral notes of honeysuckle round it out.
Little Bird has a light sweetness and equally light sourness. It is delicate in many ways. Special notes of lemon cookies and mild ginger carry through a lingering finish that has a slight touch of astringency.
The beer has a surprisingly medium body with no discernible alcohol. Spritzy carbonation helps life the silky smooth texture. It also warms better than expected but is best at optimum temperature.
This Grisette is well named as it is delicate in so many ways, and easy to consume. One could gulp and still enjoy it with good friends and conversation, or in private while watching a ball game. I imagine it would pair well with similarly delicate foods.
Grisette is a style I think will be more appreciated in years to come.
