apparently not to be confused with their elderberry saison, which is fruited. this is my first from these guys, who seem like an awesome little fermentation forward operation over there. this is a fun, rustic saison, done with what seems to be fresh elderflowers. its pale and hazy, deeper than golden to a brass shade, hazy and without as much head or bubbles as i like in this sort of thing, cool art on the bottle though, unassuming. the aroma is fresh and botanical and floral, i can truly identify elderflower right away, along with a raw wheaty grain foundation and a little bit of musty bretty funk, some citrusy tartness, and a neat maturity set against the freshness of the flowers. all of that is there in the taste too, lots of grain, dry and cerealy though, simple but bigger, perhaps a little more of a base than the delicate but distinctive flowers really need. the yeast has a tang, a lemon element, and some wet animal funk, while the elderflower is the springy bright constant through the whole thing. i like the beer a lot, but it definitely lacks the refinement i want, it could be cleaner, more alive in the glass, and somewhat more resolved at the end. that said, its a killer use of elderflower and a pretty unique fermentation profile. i had a blast drinking this one and am curious about their beer now, hope to be able to track more of it down...
