Evil Wheat Knieval is an American Wheat style with a little bit of a twist in it. For this beer we used 'Cosmic Punch' yeast which is a thiolized yeast strain. Releasing the thiols in the hops, malt and yeast gives us flavors and aromatics not usually found brewing the traditional method. This Wheat beer was hopped with Cosmic pop, Bru-1 and experimental 1624 in such a small amount it would normally be below threshold levels but using the thiolized yeast strain we get a wonderful bouquet of white grape and citrus which complement the heavy amount of wheat used in this beer. This beer was also a final goodbye from our Brewing Assistant Karter, who recently moved out of Utah County to further venture into his brewing career.

Appearance: Hazy, gold, white fluffy persistent head
Aroma: Sweet malt, soft citrus and white grape, cream
Flavor: Bready and wheaty, perceived sweetness, very low bitterness
Mouthfeel: Smooth and creamy, moderate carb, medium body

$4 - 16oz draft pour into a shaker pint
Pours a very clean and clear light yellow with a full and cloud-like head, it would be a 4 but I was expecting it to be a touch cloudier like a true hef.
Big malt nose, and some light lingering citrus
Fairly wheat forward, with clove right behind it, and just a kiss of banana creaminess and sweetness. It was very well done and executed.
Moderate carbo, and body composition, exactly what I'd expect from a wheat beer.
Overall a good wheat ale that met almost all expectations except I would've liked stronger aroma and a cloudier body.
