A blend of imperial stouts aged for 15 months in Appleton Rum barrels and 20 months in Willet Family Estate Bourbon barrels then given the Perennial Abraxas adjuncting treatment with Ancho chili peppers, Ceylon cinnamon, cacao nibs and vanilla. Collaboration with our dear friends at Perennial Artisan Ales.

Appearance: Pours pitch black with a cinnamon colored film that quickly disappears; leggy with a few dots
Smell: The adjuncts shine in the aromatics with the Ancho chile and cinnamon standing out; rich, dark chocolate and the barrel blend underpins
Taste: Dark chocolate, Ancho chile and cinnamon forward with the Rum and the Bourbon treatment appearing, in that order, before blending into the finish; the heat from the Ancho chile lingers into the aftertaste
Mouthfeel: Full bodied with a syrupy aspect; no carbonation but plenty of warmth in the gullet
Overall: The double barrel treatment creates a Caribbean impression; I think I would prefer one barrel or the other but that is just a personal preference
