Dark sour ale brewed with Maitake, Trumpet, and Shiitake mushrooms. Aged in wine barrels with a mixed culture for 20 months then refermented and conditioned on Merlot grape must. Resident Culture collaboration with Perennial Artisan Ales.

1pint 1 fl oz bottle poured into a tulip glass, a murky brown with a slight rim of lace. Aroma is heavy sour candy, grape, and apple vinegar notes. The taste is mainly grape must, sour notes, and something vegetal that I can only attribute to the involvement of mushrooms. Shiitake! Carbonation is medium low. High sourness content. Pretty good offering if you like it sour.
