Fermented in stainless, this tradition farmhouse style ale is reconditioned in the bottle (draft is secondary reconditioned in the tank). Soft and delicate with notes of hay and lemongrass that is followed by a dry, peppery finish. We’re stoked at how this beer is drinking as we continue to delve into the realm of bottle conditioning our Belgian inspired ales.

Pours a giant fizzy bubbly 3+ finger head with med retention, rocky pillowy Belgian like, with spotty lacing, mostly clear light pale color

nose brings a dry farmhouse saison, light bready malt but not sweetness, floral spices with a little dandelion like character and peppery spice phenols, faint fruit and citrus increasing as it warms, a little earthiness and farmhouse funky like notes but only to farmhouse saison yeast level,

Taste brings lots of malt actually, big doughy bready malt, some maize corn like notes, corn bread, cereal, gristy, straw, etc, into a bit grassy floral spices with more peppery phenols, lots of farmhouse dry funk (again not Brett like but saison farmhouse almost as far as it can go), mild citrus and fruit in the background, it hints at sweet sugar but doesn't get there, lemongrass and earthy farmhouse late, with a very dry finish, lemon zest and farmhouse funk with yeasty bread dough

Mouth is med to a little lighter bod, very high prickly effervescent slightly distracting carb, but small bubble bottle conditioned kind

Overall quite interesting and nice, something I would expect to get right in Belgium or maybe Amsterdam, quite enjoyable and takes me back there, although a little less carbonation would make it a bit more enjoyable
