Pours a deep ruby-burgundy with a lightly-cloudy transparency, although it is mostly clear. Head is a finger of off-white foam. Aroma is cherry, plum, raisins, cellar stone and lemon. Fruits carry a little lactic sourness to them, but blend in well. Flavor profile is cherry, plum, raisins, figs, lemon and grassy hops. There is a twinge of oak and a hint of stone to round it out. A little lactic sour bite at the onset, that is soothed away, slightly, by the cherry sweetness. Mouth feel is still with a light crispness to it. Overall, lots going wrapped up with a lactic sour bite.
Served in a 15.5oz Speigalau tulip from a 750mL bottle. Fall 2018 bottle, consumed late fall 2019.

This is a great start for a world class flanders, with plenty of sour cherry, apple, lemon zest, oak tannins, and some baseline dark fruit, especially date. It needs a little beefing up in the body, age will help, the yeast complexion is a tad light, and the finish is a bit too close to apple cider vinegar. But really I wanted either more funk or more cherry, because the barrel character and the supporting fruits are sensational, and the appearance is beautiful.

Dark reddish brown, orange around the edges when held to the light. Ample off-white foam that fades to a thin ring after a few minutes.
Aroma is lightly oaky with traces of acidic dark fruit.
Taste is much the same, sour unripened dark berry and clean oak. Higher acidity, pretty bracing and sharp. Sour apple, crab apple, lemon juice, oak. Not much funk to speak of and a bit light bodied. Carb level is moderate but ebbs away slowly. Overall this is pretty nice, though not overly complex. A little more barrel funk would definitely improve it.
