Carbonation, yay. Big whiff of bleu cheese, and a strong flavor of it too. Dill, oak, lemon in the background, some tannic bitterness. Two finger head fades slowly to a still, glassy surface after a few minutes. Carb is fairly light.
The bleu cheese is less strong over time, there’s also an earthy note that lingers, sort of vegetal, wet wood. Tartness is mild compared to the previous one (Au Revoir), a bit of crabapple and lemon pith.
Overall it’s a bit more drinkable than the last one too, though the tannic bitterness and acidity are nearly at equal levels. Overall it’s pretty good, though could use a little more balance to really shine.

Clear bright gold with a white collar and webbing, visible light carbonation. Get pear, white peach, white grape, oak dandelions, and moderate earthy funk. Tastes like oak aged sand with white peach, and short lived flowers and hibiscus. Corn is just so harsh. Feel is bitter up front, earthy as bridge, and brightly sour in the finish. The corn/sand just lingers and lingers, you can't escape it. Love WR but this was a miss

I am going to start my day funky. I have two beers that are Farmhouse style. I am trying my first beer from a White Rooster brewing. The artwork on the label is elegant yet defined. The beer is 42 degrees and served in my Blushing Monk Tulip glass. The pour formed a two-fingered bright white foamy, airy, and creamy head. The retention of the head is non-existent and left no lacing on the glass. The color is SRM 10, medium amber with dark golden hues. The clarity of the beer is clear with active carbonation. The appearance of the beer is beautiful.
After I popped off the top of the beer, I got an immense funky earthiness. Nosing the beer, I detect straw, horse, leather, and lemon. Working my olfactory senses further, I smell lightly toasted malts, grass, orange, crackers, and yeast. The aromas in the beer are vibrant.
I taste horse, barnyard, leather, floral, herbal, lemon, earthiness, oranges, crackers, grassy, peppery.
The mouthfeel of the beer is dry and carbonated.
The body of the beer is light, medium carbonation, and a medium-plus finish.
This beer is delicious and funky.
