My first from this husband-wife nano, I went on their website and was both amazed and entertained. I am entertained by the very funny telling of their story. But, I am amazed that near-novices can start brewing in one of the most difficult and unpredictable areas of brewing. Wilds also have a very small market (for good reason IMHO.) But they decide to make a go of it, out of love both for brewing and marital bliss. At age 72 with a life of failed ambitions and marriages, I can't say they have made the right choice. But, I give them very good Overall Hugs for their efforts. And I will give their brew a fair shake.
Out of some 90+ Wilds, this may be my first lager treated this way. Conceptually it is really dangerous to try the most rigorous brewing tradition in a Wild way. I'm not surprised to find that I'm not drinking a lager, but maybe some mutation.
Mills' Pils (the alliteration may be intentional, but counter-productive) foams in ways that pilsners' rarely do; but I give points for innovation. Relative to other Wilds, Mills' Pils is only slightly above average; Mills' is mute in a style that varies hugely. Only in the Taste do I know I'm dealing with a Pils malt and it is so dry that I barely recognise a pils bill. But it is interesting and vinegary. Medium-mouthed. Glad I tried it; glad I'm done.

Look: 3.5. Hazy canary yellow with short lasting head.
Scent: 3.75. Lemon, hazy cider, sour funk.
Taste: 4. Lemonade, lager malt and hops, with vinegary notes.
Feel: 3.75. Smooth with moderate carbonation.
Finish: 3.25. Armpit-like wild funk and tea-like bitterness.
Overall: 4. An interesting sour pils. Would definitely buy more.

Pilsner base, then refermented in oak barrels with wild yeast, then whole leaf dry hopped.
Pours a clear pale straw.
Smell is estery, peppery, funky, herbal and citrus.
Taste is the same, with a touch of tartness.
Feel is light and zingy, carbonated, bur tight bubbles almost like champagne.
Quick liked it. Probably because the primary fermentation is with lager yeast, then wild. So not too much sourness.
