Saison Wet Stone

Saison Wet Stone is a single barrel bottling of three year old beer. It was brewed in March 2022 from a grist containing malted wheat, caramelised malted barley, and cane sugar. Large quantities of European and US hops were added during the boil to limit the acidity produced in the spontaneous fermentation.

The finished beer was dry-hopped with whole leaf Slovenian Celeia before bottle conditioning with solely wild yeast and bacteria to produce fine natural carbonation. The finished beer is hoppy, fresh, aromatic, and spritzy.
