Collaboration with Brasserie Cantillon. Saison de coupage inspired by the ones made in the 19th Century. The base is a saison brewed with rustic cereals and blended with 2 year old lambic from Cantillon, this was then aged for a year in oak barrels before spending 6 months in the bottle.

A 750ml bottle, with a best before date of 30th April 2026. Poured into a Tilquin stemmed glass.
Appearance: A slightly hazy golden orange colour, with a thin white head that dissipated quickly and left only sparse to no lacing.
Aroma: Grape skin, gooseberry, oak, funk, with a splash of lemon zest.
Taste: Lightly sour, grape skin, gooseberry, watermelon rind, lemon, funk.
Mouthfeel: Medium bodied with soft to no carbonation.
Overall: I opened the bottle thinking it was a Saison without really reading the label. Obviously not the case, and it was ok, but the lack of carbonation was not really my thing. I was also hoping the Saison would be more prominent, but you don’t really notice it as the Lambic is dominant.

Bright brassy gold, a few loose bubbles but not many. Sharp clarity, still surface. The unblended lambic seems to have diluted the CO2 present from the Saison du Coupage. In time, it will likely carb up. This seems made to be cellared, but I couldn’t wait. Oops.
Bright citrusy aroma, lemon and grapefruit, as well as some oak traces. Taste follows suit, big citrus, some brief malt nuttiness, and a dry oaky finish. Moderately tart, light and easy drinking like a Basque sidra meets unblended lambic. Medium bodied, what little carbonation there is ebbs away after a few minutes.
Overall it’s a cool experiment, a faithful recreation of an historical blend that is all but extinct today.
