Blend of Saison Meer and Saison Meer: Ground Cherry aged in a barrel that previously contained Barr Hill gin, which is made with honey, leading to honeyed vanilla and toasted-oak notes as opposed to the more zesty citrus coming from other gin barrels that we've used.

Murky bright yellow body with a white ring and spotted lazy lacing. Potent yet refined aromas from the gin barrel with wildflower honey, flowers, bright citrus, and cherry skins, really impressive integration. Best tasting afterthought of 2021 in my humble opinion, the honey, gin, toasty oak, and flowers combine with the wild yeast to give the palate notes of vanilla, creme brulee, orange, lemon, peach, lime, and a hint of pineapple, all the while having a light barrel funk and tart cherry skins and flesh to dry out the finish well. Feel is bright, light, somewhat delicate but mostly wild and so smooth with a nice touch of tartness and funk, barrel is larger than most afterthought saisons. Great use of the barrel and blend!
