Brewed in collaboration with Revolution Brewing Co.
For both of the versions of the collaboration we brewed at our place, we used another experimental, no-name hop — HBC 586 — and paired it with some gorgeous New Zealand Nectaron courtesy of the Revolution team.
For this batch we fermented it in stainless steel with saison yeast, Brettanomyces, and our house culture then also dry hopped it with Nectaron.

Pale gold, some haze, three fingers of foam, and chunky lacing stuck to the rim of the glass.
Strong aromatics of Brett and dry hopping, eucalyptus and dried lemon, floral, rustic, and slightly funky.
Tart and crisp, effervescent and dry. Lemony, dried herbs, cheese rind, wet hay. Lighter bodied, fairly well carbed, pairs well with food, cheese and charcuterie especially.

A slow pour yielded a HUGE white head (careful pouring!); a thick curtain of tree-rung lace.
Lemon & raw wheat notes in the nose.
Medium mouthfeel.
Lemon & wheat flavors; this was simple yet elegant. A very nice brew.

Afterthought's beers are all highly carbonated, dry and not especially sweet. Almost like having a glass of white wine. Revolution does hoppy IPAs. They did a collab.
So it's highly carbonated and dry. The hops are a new variant, Nectaron. I actually am getting pineapple and peach and grapefruit. The flavors are that evident. And yes, there is some perceived bitterness. To me, a quite enjoyable beer.
