Brewed in collaboration with Revolution Brewing Co.
For both of the versions of the collaboration we brewed at our place, we used another experimental, no-name hop — HBC 586 — and paired it with some gorgeous New Zealand Nectaron courtesy of the Revolution team.
For this batch we fermented it in a neutral oak barrel with saison yeast, Brettanomyces, and our house culture.

Pours a light straw color with modest head that fizzes away completely. Honeydew melon, white peach, plenty of florals, with some crisp acidity, barrel oak and very light grassiness.

Had on tap. Murky goldenrod body with a white head. This took the base collab saison and used the oak to amp up the fruit and sourness! Tastes of passion fruit, yuzu, lemon, big lime, peach, and backed by the house yeast and bright oak with a kiss of funk. Smell focused on citrus and sour solely with a light oak backing. Feel is sour and lightly funky, but more so oaky, bright and wet. Fun to have side by side with the original, very different
