We brewed up an imperial kettle sour and decided to let it rest in some DRIPPING wet 12yr Appleton Estate Rum barrels. It came out as we intended, tasting almost like straight rum. To complete it, we then finished it on hundreds of pounds of passion fruit, pineapple, orange zest, as well as a mess of almonds. Despite all the fruit, this still sits at about 10.5% ABV, straddling the line between cocktail and beer.

Is it cocktail or is it beer? Does it matter if it tastes good? In this case, it does taste good, so who ultimately cares ...
The appearance is a fruit juice smoothie with tons of sediment. Ugly AF. No head, no apparent carbonation. Color is a matte brownish orange. Aroma is rum, a lot of almond and generic citrus, pineapple and passion fruit notes. Quite nice on the nose.
Taste follows the nose with notes of almond, pineapple, citrus, and rum. The almond is remarkably prominent giving the impression of amaretto. But overall it is very fruity in its presentation. On the sweet side of things, but not cloying. Feel is thicc, almost gritty from the fruit in the beer, and heavy. The carbonation is bright and desperately needed to keep the beer from drinking like a literal smoothie.
Overall its a unique take on the fruited sour beer - love the idea of barrel aging being incorporated into this beer and what it brings.
