OUILLAGE is a blend of two English barleywine recipes brewed over 2 years ago.
One recipe that was brewed with wheat and rested in 7 year Weller Barrels for 24 months. What resulted was straight toffee, notes of maple syrup, oaky vanillins, and subtle chocolate.
The second recipe was brewed with Belgian candi sugar and rested in 10 year Buffalo Trace Mash Bill #2 barrels (the resultant liquid is quite hard to find). This met us 26 months later with deep notes of fig, rich cacao, and a balancing note of noble hop.
Blended , we found a liquid greater than the sum of its parts.

500 ml bottle into a snifter. A 2023 release, had 10/12/24.
Pours a semi opaque dark ruby color, with no head and no lacing. Aromas of bourbon, caramel, malt, some raisin and vanilla, light tobacco and oak. Somewhat similar flavors: bourbon, caramel, oak, malt, some raisin and vanilla. It’s a little sweet, nothing crazy. Smooth, a very good medium body, appropriately carbonated.
As I recall, these guys released seven barrel aged beers between Oct-Dec of 2023. I think this one was the best of the group, barely beating Rare Form. Lots of barrel, strong caramel notes and overall a number of expressive aromas and flavors. A solid effort.

Sweet caramel and toffee bits, a hint of butterscotch, and a vanilla-bourbon barrel boozy nose on this one! Taste follows with those caramel/toffee notes upfront...and then an almost almond-nutty, bourbon barrel boozy heat finish. Yum! This doesn't have as much dark fruit influence that I look for in my english BWs, but this is well done! Nice mouthfeel, extremely well balanced with some very well-integrated barrels. Great!

Thick, sticky mouthfeel.

A boozy bruiser, with a bit of sweetness for ballast. It's a lot, but it's pretty good overall.
