a celebratory and delicious mixed fermentation brett thing, saison-esque but very light and minimally grainy to me, and its all bretty funk rather than spicy or estery yeasty nuance, its awesome stuff, super well refined, decently well aged now too, and drinking fabulously well, a fun one to pop while cooking on thanksgiving, love the low alcohol and high complexity, they should be proud of this one. its also done with riesling lees, which is awesome, and something i think should be more common than it is in this sort of beer, adds a lot, light fruitiness but also a champagne sort of vinous element, some yeasty complexity, and a uniqueness that feels very personal. immaculately clear through much of the bottle, which gushes out a little white foam when i first pop it, lovely head pure white and airy and wispy and bottle conditioned looking, slow to settle but some of that champagne rise and fall to it, lots of consistent carbonation too, just a bit of sediment making the last little pour a touch hazy, very pretty beer in a white wine glass. the nose is funky and bretty, a brux type complexion but with some fruity wine character too, maybe pils malt in front of wheat to me on the grain side, impossibly light there, some minerality for sure, and some bitterness from the wine element it seems, light oak and oak tannins, clover flowers, just mowed grass, and summery white wine, a touch of green pinecone, lactic tartness, and white pepper too, very dynamic, well composed. the flavor is killer, somewhat simpler i guess, minimal grain, very mature bretty character, recognizable but made unique with the less element, which adds bitterness and acidity, but cool fruitiness too, layers of lime, cucumber peel, and wet stone, but its the brett that really defines this. i love this kind of beer, love how light and expressive it is, how weird from the ferment, and how patient and intentional it feels, true art in the bottle, perfect for a celebration, and the texture of this is as good as the flavor. ive been impressed overall with these guys, but this is an especially nice bottle, one of my favorites from them to date. the cellar has been good to it, and i wish i had another one! very very good.
