IRORI 囲炉裏 is our tribute to Greg Noonan, a pioneer of American craft beer and our dear friend and former mentor. Noonan was the owner and head brewer of Vermont Pub and Brewery for over 20 years, during which time he authored many seminal books on brewing and helped inspire a new generation of brewers, including our own. This peated scotch lager is a formulation of Noonan's many passions -- namely, scotch ale, lager, and smoked malt. We decided to implement the knowledge he so gracefully passed down into one beer; a spiritual collaboration between mentor and pupil. Noonan passed away in 2009, but his legacy lives on in the struggle and love we apply to everything we make. We thank the Noonan family for allowing us to undertake this effort. This one's for you, Greg.

From a 355ml can dated Dec. 03 2025, poured into a pint glass. A scant two finger bubbly tan head on a very dark reddish brown. the head soon diminishes to a layer that sticks around.
Moderate smoke in the nose. Much more smoke in the first sip. Toffee. Some sweetness and caramelized malt. A long dry finish.
A medium body and carbonation. Overall a fine Smoked Lager. The peat smoked malt is an interesting variation. Well worth a try.

Can: Poured a copper color lager with a medium size offwhite foamy head with good retention and some lacing. Aroma of smoked malt notes with some light caramelized malt notes. Taste is a mix of caramelized malt notes with some smoked malt and light residual sugar notes. Body is about average with good carbonation. Enjoyable smoked lager and not even sure the 8% ABV is really required.

Shining ruby-red/copper body, clear, with a sandy head that forms well, holding a minute or so retention.
Lovely mild peat married with caramel and butterscotch malt aromas.
What a wave of flavour - butterscotch and toffee malt sweetness paired with just the right amount of smoky peat, followed by bracing bitter spice hops. All of it balances beautifully, turning out remarkably crisp and drinkable considering the abv and flavour profile. Medium body, medium carbonation.
An inspired medley of styles and flavours, very well executed. This easily could have been heavy handed with the peat, the restrain pays off.
