Umi (海 meaning “Sea or Ocean in Japanese) is our Gose style ale with a Japanese touch. We did incorporate Shikuwasa citrus and sea salt both originating from the southern tropical islands of Okinawa in Japan. We added Indian coriander seeds since coriander was historically part of the original Gose recipe. Godspeed is also located in Toronto’s Little India so we wanted to pay our respect to our neighbours.
A Gose is supposed to be a none to very slightly tangy refreshing beverage without being overpowered by any ingredients involved in the recipe. Please enjoy our interpretation of it, made the Godspeed way, with subtlety and respect. Cheers!

Poured a 355ml can into a pilsner glass. A two finger fine white head on a slightly hazy straw. Good head retention. Reduces to a thin layer that sticks around. Fine lacing.
Wheat malt and coriander apparent in the nose.
Very subtle flavours. Citrus and coriander are both apparent but smoothly melded. A smooth salt finish.
Light body and moderate carbonation.
A refreshing and true to the style Gose. Full points for balancing the flavours but still understating them.

Got in a BIF from Coronaeus. 12 ounce can into tulip glass, canned on 2/26/2019. Pours fairly hazy medium golden yellow color with a 2 finger dense and fluffy white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of tart/tangy lemon, lime, citrus peel/rind, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, sea salt, hay, straw, grass, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of Japanese citrus, fruity/acidic yeast, coriander, salt, and moderate pale/wheat malt notes; with solid strength. Taste of big tart/tangy lemon, lime, citrus peel/rind, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, sea salt, hay, straw, grass, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness. Light-moderate fruity/lactic tartness; citrus peel/rind bitterness; and coriander spiciness on the finish. Lingering notes of tart/tangy lemon, lime, citrus peel/rind, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, sea salt, hay, straw, grass, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness for a good bit. Very nice complexity, robustness, and balance of Japanese citrus, fruity/acidic yeast, coriander, salt, and moderate pale/wheat malt flavors; with a nice malt, tartness, bitter, spiciness balance. Moderate increasing dryness from lingering tartness and bitter/spiciness. Medium-plus carbonation and light-medium body; with very smooth, moderately creamy/grainy, fairly crisp/acidic/sticky/resinous/rindy, and lightly saline balanced mouthfeel that is good. Slight lingering rind/spice astringency, but not overwhelming. Zero warming alcohol as expected of 4.3%. Overall this is a very nice gose. All around nice complexity, robustness, and balance of Japanese citrus, fruity/acidic yeast, coriander, salt, and moderate pale/wheat malt flavors; very smooth and fairly crisp/refreshing to drink with the modestly bitter/spicy/drying finish. Not overly lactic/salty. Very flavorful for the ABV. Very well balanced vibrant Japanese citrus, Lacto complexity, spice, and salt; with a nice pale/wheat malt backbone against acidity for the ABV. Minimal residual sweetness with crisp dryness. A very enjoyable offering, and well made style example; just wish it lacked the citrus/spice astringency.
