Kaede 楓 is our longest project to date and one we've been patiently watching develop over the many years. What began as a Godspeed-Style Porter evolved into something else entirely thanks to a generous addition of Quebec Maple Syrup and three years of conditioning in stainless before a final calculated blend of fresh smoked beer. Atop a sweet and delicious maple chocolate cake lies notes of aged port, peat smoke, with a lingering, chest-warming heat in the finish. We packaged Kaede "still" like some of our favourite fortified wines, lending more body and depth to the finished beer. It's unlike anything we've produced and we couldn't be more proud of the results - we hope you enjoy today or down the road, in the company of those you love.

A- Love the dark label....gives this an aura of mystery....wonder what we have here??......lovely dark cola color with a chocolate brown hue around the top rim. Of course this being a still beer, there is no carbonation, lacing or head to speak of, so we need to give this area a bye here....after a gentle swirl, there is a watery slick of liquid that stays on the inside of the glass.
S- I immediately get strong Christmas rum cake, with heavy notes of dark fig/toffee pudding. The malts used must be leaning into chocolate/vienna, as it has a distinct milky chocolate aroma, as well as some toasty brown sugars.....As this warms up, strong aged tawny port sweetness, muted maple syrup, rum barrel, and an Earthy boozy aroma that really wakes up the nostrils....rich and robust overall.
T- Holy Moly....talk about a difference from the aromas! This is wonderfully sweet, and the Quebec maple syrup shines through from start to finish....this is like pancake syrup....really!! Other flavors that come to mind......this is a close call to what a sticky toffee pudding topping tastes like.....chocolate notes and vanilla abound as well....this is sticky on the finish and lingers well after the swallow.....this is perfection as far as what the flavor should be in my opinion!
M/O- Ok, so we have no carbonation, but we do have some slight effervescence that just puts a little zing on the palate....its barely there, but there nonetheless. Medium-full bodied, and as much as I love this one, it is most definitely a sipper and the small bottle is more than enough for the average person....very rich, very sweet! Would work lovely as an ice cream topper (Vanilla), or with a banana souffle. Excellent!
