Seventy Eight Lager Saison Co-Ferment is nuanced, evolved, and devoid of outdated constructs and confines. We grew both a lager and saison yeast strain separately and then we married the two and let the saison do its thing. The result is a beer that's light and peppery with a touch of stone fruit, while also maintaining the lager crispiness that we are all so fond of.

In addition to eliminating any ambiguity about where XhAle & Annex Ales stand relative to the importance of using people’s correct pronouns (all 78 of them), this beer supports the Trans Affirming network at Skipping Stone and the safe spaces they work to create and reinforce.

Poured from a howler purchased from Collective - A Craft Beer Shop.

Appearance - Pours a foggy honey amber with two fingers of frothy white head.

Smell - grassy and hint of spicy hops, lemon, bready and biscuity malts, hint of fruity esters (clove, banana, and pepper), earthy lager and spicy yeast.

Taste - mild grassy and hint of spicy hops upfront. The lemon, and bready and biscuity malts come through next. The lager elements tone this brew down to a mild saison which is fine as this isn't supposed to be a traditional saison as it is mixed with lager elements. The fruity esters of banana, clove, and pepper come through next. The earthy and spicy yeast round out the brew.

Mouthfeel - Medium bodied with moderate carbonation. Finishes off-dry with the fruity esters lingering.

Overall - A interesting take on blending two opposite styles together. It worked in some respects but in others it just made the brew a tad mild in flavour. I would recommend this one to anyone looking to branch out into the saison style for the first time.
