a neat brew here with pink guava, lime, and margarita salt, super pale, cleanly soured (very nicely done here), and with just enough guava to make it interesting, slightly tropical, and balanced against the citrusy lactic tang this finishes with. the margarita salt might be lime salt, or there might be lime in it, its tough to tell, but the minerals of the salt are as obvious as the brine element it contributes, and the acidity of the lime resonates with the bacterial souring in a cool way, the whole thing is summery and bright and really sings, refreshing too, more so than sour beer usually is for me, even a gose. the wheat malt in here is super light, more pale pils type than anything, but not a ton of that coming through either, and basically no hops, so this depends on the fruit and salt a lot to give it character. guava is natural and light and not fermented all the way out, the lime highlights it well, and the saltiness adds a briskness to the finish, along with nice carbonation. they did a good job with this, the souring is surprisingly professional, and overall this was a tasty and unique modern gose. well done.
