Blackberry Time began as our sour red ale fermented for a year in a new (to us) Bordeaux wine puncheon (double-sized barrel) with a carefully selected blend of Saccharomyces, Brettanomyces, Lactobacillus, and Pediococcus yeast and bacteria. After that year, it spent a year in stainless on local blackberries from Strawberry Hill USA, before finally being packaged and conditioned right in the package.
