A- pours a clear golden color with a one-finger foamy white head that has short retention
S- lacto and brett funk on the nose gives aromas of dried hay, barnyard, yogurt and lemon peel. The pawpaw fruit gives that custard-like aroma. Notes of apple, pear and earthy yeast close it out
T- slightly sweet pawpaw notes up front gives notes of custard and, following by complimenting notes of pear & green apple. Mid-palate brings out some light brett funk, adding dried hay and some earthy barnyard notes. The finish is slightly tart, with pawpaw fruit and peppery, slightly phenolic yeast on the linger
M- medium body with low carbonation leads to a foamy mouthfeel that continues into a bubbly, almost effervescent finish
O- the brett and lacto is scaled down, allowing the fruit to shine, while making this extremely drinkable.
