This dark ale was mashed with local barley, wheat and oats, as well as some roasted chocolaty malts. Fermented with a blend of French and Belgian saison yeast and re-fermented with plums.

16oz can poured into a tulip
A- pours black in color with a one-finger foamy khaki head that has good retention and leaves a bit of lacing behind as it settles
S- aromas of cloves, banana, toasted wheat, bubblegum, as well as some phenolic notes up front. Undertones of chocolate, roasted malt and ripe dark fruits
T- saison yeast up front gives notes of banana, clove, basement must and phenolic flavors. Mid-palate gives notes of toasted wheat, sweet chocolate and honey. The finish gives an array of sweet dark fruit notes, including plumb, fig and raisin. Lingers of musty yeast, cracked pepper and clove
M- medium body with moderate-low carbonation leads to a slightly foamy mouthfeel and a semi-sweet foamy finish
O- a full flavored saison that has all of the classic saison notes, with the added chocolaty and malt and dark fruit, well done
