Saison Sec is almost clear, pale gold (SRM 3-4). Lots of lazy carbonation reaches a short-lived, dense, off-white foam. The head falls from one inch, leaving patchy lace on a PBGC Crispy Boi glass before holding one-half inch for the duration.
The aroma is similar to fresh barnyard straw with fermented apples and coriander. Also noticeable are white pepper and a real nice, funky spiciness. Warmth reveals light floral notes and hint of sourness.
The flavor closely follows the nose in all aspects. The sweet bitterness is balanced against light sourness and acidity. All fairly moderate. For a Farmhouse Ale, this is extremely crisp. Dryness helps accentuate the pepper and coriander, which take over from the middle and carry into a long, eternal finish. Extended warmth brings out lemon/lime, while softening the other flavors without muddying them. The warmer this beer gets, the more traditional Saison charm it presents.
A medium body with scratchy nylon texture. The presence of alcohol is surprising, while the lightly astringent finish is expected. The carbonation is highly effervescent with scrubbing bubbles.
This is another nice, crisp Saison from Eurisko. I imagine it will work exceptionally well with a mild white fish or fatty, soft cheese. I enjoyed it on a bitterly cold, sunny afternoon while watching white snow covering the ground.
