Columns of fine carbonation continually reinforce a big, fluffy white maringue that reaches and holds two inches before leaving frothy lace on a PBGC Aromatic 2 glass after several minutes. The head never falls to less than a quarter of an inch, over an almost clear, pale straw beer (SRM 2-3).
Crisp grain and straw form the aroma with equal measure. Light barnyard and peppery aromas follow, with coriander, lemon, and lemongrass filling the gaps. Perhaps there is a hint of brine, though this may be my imagination.
The flavor follows the nose closely in both character and progression. Crisp grain is complimented by light sourness in balance with bitterness. Overall, this is very dry, with lots of lemongrass and coriander in the finish.
The light body is almost non-existent, especially given the explosive, fine carbonation. The texture is scratchy nylon, with alcohol so subtle that it is barely noticeable. Despite being so incredibly dry, there is no dusty sensation. Warmth brings out mineral qualities that further dry the palate.
Eurisko knows how to brew a Saison. This one is more crisp than earthy, and not for a moment did I suspect it might be anything other than a Saison. I enjoyed it while reading on a cold, sunny, February afternoon.
