My second try of this beer, both times on-draught at Concordia Ale House (Portland). Served in a large snifter.
A: Golden-honey color and slightly hazy. Wispy thin head, off-white. Very little carbonation rising. A pretty color, but not much else going on.
S: Subtle yeasty smell, apple cider with a lightly toasted grain and mild spice. Devoid of any of the rustic 'barnyard' qualities that make this style so appealing. Too bad.
T: Crisp apple pulp, soft pear, clover honey. A floral, 'spring-like' essence with a more chalky-dry finish. Maltiness is grainy and just lightly sweet, with a quick dash of coriander.
M: Seems really simple and somewhat watery/weak. Mouthfeel is light but might have seemed fuller had either the spiciness or dry bitterness been more pronounced - neither were. A positive note is that this beer is refreshing and moderately crisp. A little alcohol warmth in the mouth.
D: An admirable try at a tough style made by one of my favorite brewers. Alas, not one of the better examples of the style nor one of the better Walking Man offerings I've tried. A decent, drinkable beer on a sunny spring afternoon, but at 7+% abv, this one could sneak up on the unsuspecting...give it a try.

On tap at CAH. Light amber with a lot of effervescent character. The Saison flavor I was expecting didnt show up to smack me about with its Belgian self...but very subtle flavor and a sweetness that gets a little overboard by the end of the chalice.
For a Walking Man beer this is not my favorite, but for a beer compared to all others its pretty darn tasty. Bob makes great beer! (Apparently this is Jacob's recipe, gotta give props where props are due.)
