a neat little saison here, built for the fall. amber in color and a little more substantial on the malt than a lot of these ever are, but still on the dry side, they did a nice job building this one, the flavors are layered and interesting, yet the beer is very drinkable at the same time, i think it fits the season well, and it was one of my favorites that we had in here. i didnt get any details on the recipe for this one, but i could swear it has sorachi ace hops in it, which on the surface dont sound much like the autumn, but the herbaceous dill and bay character really work with the richer earthy grain base, and the oily slickness these hops always seem to have gives it even more structure, nice for the cooler weather. i cant confirm they are sorachi ace hops, but its something close, and the hoppiness is both unexpected and delightful in here. the yeast is pretty subtle, even a little bland as they go, but it has some soft belgian spiciness that works with the grain here, simple though, not overdone, clean in the finish, i like the way it all comes together. this is a saison type to be consumed by the pint, a well made beer and a very cool recipe.
