Mixed fermentation with clean saison yeast and wild yeast & bacteria from barrels. Not spontaneously fermented to be lambic.
We've been waiting for this Kriek inspired beer for over three years. The base beer was a Spelt Saison brewed in December 2019. It marked the third time since we opened, we filled the "Mothership" Puncheon. In August of 2022, we blended the mature sour beer with 4.4 # / gallon of pitted Door County Montmorency cherries. Bottle conditioned with Champagne yeast for natural carbonation.
