this thing is fantastic, glad we brought some bottles back to crack from this rad little operation. they call this a belgian table beer with cashmere hops, but i think that undersells it, as its bretty and funky and not as estery and classically belgian as they make it sound, maybe more than one yeast at work here, but to me this is farmy and saison-eque more than clean belgian. anyway, its awesome. lightly hazy pale and heady from the bottle, thick bottle conditioned bretty whipped head sits perched way above the rim of my glass all airy and lasting, the base beer is fizzy and minimal. i love how funky it is, brett brux, earthy natural white wine, dried culinary herbs, minerals and pennies, perhaps some raw wheat or spent wheat, like this could be second runnings from something, which is cool. i love how low alcohol it is too, insanely flavorful for this modest strength. this is white peppery, lemongrassy, and truly funky, especially at temperature. citrus rind, old musty wood, and then all of a sudden out of nowhere this wonderful fresh and delicate hop profile from the cashmere, meyer lemon, coconut flesh, champagne, all so complimentary to the brett and along with the fermentation really defining this one for me. the hops do bring some light bitterness, and i like how fast the finish is. really impressive beer here, lots going on but highly drinkable, fully effervescent in texture. i would have like to age this awhile, but its drinking awesome right now too, very cool mix of flavors and well refined. yum, my kind of summer beer!
