a splendid beer, one of my favorites from our too short visit to this awesome spot! its in a sexy little clear bottle, but i had it on tap. a brett saison on second use cherries aged in wine barrels, neat idea using the fruit again, good wisconsin fruit, why not max it out! the color is more orange than red though, hazy and pink tinted, effervescent and light looking even though there isnt much head after a minute. huge funk to the nose, lots of wine too, this is woody and tannic and mature, the brett is wet and musty, a sort of just poured concrete stone character too, peaches and white grapes, just light astringency but this doesnt present as sour and the flavor is the same, just tangy but way more bretty and funky, could be some saison yeast in here too, a light white pepper ester, maybe a mix of brett strains as well. the fruit is pretty subtle, at least as cherry, the second use fruit almost casts off more peach and apricot and even orange wine vibes, rather than cherries specifically, medicinal in a good way with the brett, light bodied but seemingly wheat based too, and dry to finish with the wine rushing back on an oak wave after the swallow. really good carbonation to this as well, and im sure a bottle conditioned example would be even better. really sneakily awesome and ambituous brew here, which was true with a lot of what we drank in here, awesome little brewery!
